What is the benefit of a physical device?
The only way to access your apps is to tap the Tap Out - physically. Removing proximity makes increases friction to makes the bad habit to constantly open your distracting apps hard.
Software solutions (such as Apple Screen Time limits) helped, but the "key" to unlock the distractions was always present, as you always had the option to bypass the limit.
If you want to lose weight, don't put the cookies on your desk - leave them in the store or somewhere hidden.

In the unlikely case that you lose your Tap Out Point, You will always be able to access your apps with an emergency Tap In. But to use the app again, you will need another Tap Out Point.
Do you have access to data of which apps I block?
Nope - all information about which apps you block is stored only on your iPhone.
